Ingles : Gastronomy of Ecuador The ceviche volquetero, or simply dump truck integrates ingredients from the three great regions of Ecuador. It is one of the best-known dishes of Puyo, in the province of Pastaza. The origin of the dump truck is explained as a ceviche created by dump operators during the construction of roads in the Ecuadorian Amazon. They used canned tuna, roasted from the mountains and the mandarin lemon and banana chifles from the East.
